Talk about grabbing the best of the best jerseys from recent ND stars - Zibby and the Shark. Nice work. If you have a specific want list of ND stuff, let me know, and I'll keep you posted if I come across any of the stuff. Alternatively, if you decide to move stuff, let me know (I saw your Bobby Taylor Eagles listed in the for sale section, and was tempted).
As for your other question, my understanding (I don't know this for a fact) is that they previously issued 2 home and 2 away in each mesh style (aka they used to use an open mesh weave and a micro or closed mesh weave when they had champion jerseys). However, given the fact that the university is actively selling jerseys now through both Steiner and CSTV, I would not be surprised if more exist for each player (maybe 3 home, 3 away + special issues like the green). Also, I think the players can buy at least one of their home jerseys (I believe the seniors are still given one of their home jerseys), and I know they get their bowl jerseys to keep (at least they have in recent past).

I do not believe Notre Dame is currently recycling jerseys given the fact that they are so active in selling them these days. I bet the jersey you got was used in 2006, and the auction listing it as 2007 was a mistake. Frankly, I think the CSTV auction listings leave a LOT to be desired, so mistakes like that would not surprise me. However, ND did recycle jerseys as recently as early 2000 for sure, and may still - but I don't think it is as likely now.
