It is not my place to tell you what to do, but since you asked, I will share my humble thoughts. You listed the jersey for $750, so the right thing to do would be to honor that price and sell the jersey to the first person who contacted you with a firm offer to pay that amount. This is the fairest and most honest way to handle this type of situation.
Occasionally, when I list a new item on my price list, several collectors will contact me on the same day wanting to buy the item. (I'm sure this happens to others as well.) I sell the item to the first person who contacted me with a firm promise to send payment, regardless of what types of tempting offers come later in the day. And if for some reason the initial Buyer backs out of the deal, I will go to the second person who contacted me and offer it to them at the same list price, regardless if they or anyone else has offered to pay more than my listed price. I would think (and hope) that most Sellers would do the same.
